Includes the adjustable slicing blade.  Mounts on most commercial dough mixers.
Use this slicer assembly for slicing all vegetables.  Adjustable from 1/8" (3mm) to 1/2" (13mm).
What is a Pelican Head?
"Pelican Head" is the Butcher-Baker informal name for the slicer/shredder/grater attachment that can be added to most commercial grade electric mixers, meat grinder motors, choppers and power drive units.   It gets its name from the chute that resembles the beak of a Pelican.  This attachment allows you to operate a busy restaurant or kitchen by taking advantage of your existing power equipment by utilizing it to chop, grate, shred or slice an array of raw food items such as most vegetables and of course cheese

You then select the slicing Knife OR the Disc Holder (and preferred size of disc) for shredding or grating.   Discs are available in six sizes from very find grater size  up to 1/2" for coarse shredding.   For slicing vegetables you use the slicer knife in the unit.  The knife is adjustable for slicing vegetables from 3/16" - 1/2".

The #12 size has the 1/2" square drive and will fit most commercial mixers from 12 to 60 quart size (and all other #12 power drive motors.)  The larger #22 is for very large mixers in the 80 and 140 quart size that requires the 3/4" drive.  (Also fits most #22 drive units.)  Attaches to Hobart, Univex, Varimixer, Uniworld and virtually all other brands of commercial mixers
